Update Sawtooth Architecture Guide for Accuracy

Update existing text in the architecture guide for accuracy and relevance with respect to the current version of Sawtooth in the master branch. In addition to updating sections, this may include removing outdated design sections completely when the information is not appropriate for the architecture guide (such as the current Journal section). This excludes PoET sections of the Architecture Guide.
